Spiced Pumpkin Loaves ~

 

  • 16 oz pumpkin puree
  • 1 2/3 c sugar
  • 2/3 cup vegetable oil (or 1/3 each applesauce and oil)
  • 2 tsp vanilla
  • 4 eggs, lightly beaten
  • 3 oz cream cheese, room temperature
  • 3 c flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 3/4 tsp baking powder

Preheat oven to 350; line 2 loaf pans with parchment paper, coat lightly with non-stick spray;

Mix pumpkin, sugar, oil, vanilla, cream cheese and eggs in large bowl.  Gently stir in remaining ingredients.  Bake about 50-55 minutes or until pick inserted in center of loaf comes out clean.  Remove from oven; allow to rest in loaf pans for 10 minutes; move from pan to cooling rack.

My family loves when I serve this with a ginger-cream cheese glaze ~ simply soften an 8 oz block of cream cheese, grate 1/4 tsp fresh ginger, 1 cup confectioner’s sugar, a dash of vanilla. Just place everything in a medium sized bowl and mix well ~ place in cute serving dish and watch it all disappear!
