We recently attended a sweet lavender festival just outside of Boise Idaho… With the windows open, the 100 degree temperature gently perfumed the air, miles before we reached the garden gate.
Lavender Scones
2 c flour
1/2 c rolled oats
1 T baking powder
1/2 t baking soda
1/2 t kosher salt
1/4 c butter
1 1/2 T lavender flowers, fresh or dried
1 egg, lightly beaten
1/2 c honey
1/2 c buttermilk
1 t vanilla
1 T milk (optional)
1 t raw sugar (optional)
Preheat oven to 400; combine flour, oats, baking powder, soda and salt in a large bowl; cut in lavender and butter; pour in egg, honey, buttermilk and vanilla. Stir just until dough forms; with floured hands, shape into a round, about 1 inch thick, onto parchment lined baking sheet. Cut into wedges, brush with optional milk and sprinkle with raw sugar. Bake about 10-15 minutes, or until lightly browned. Serve warm with mascarpone and honey.
