Shishito Peppers, Goat’s Cheese and Crusty Bread

According to Wikipedia, Shishito pepper is a sweet, East Asian variety of the species Capsicum annuum. It is known as kkwari-gochu in Korea due to its wrinkled surface resembling ground cherries.

Looking for a great appetizer or light dinner to savor the last of the summer nights? Find these little gems, and voila! Dinner is served!

  • Shishito peppers, about 10-15 per person (may substitute other mild pepper)
  • 3 clove garlic, crushed
  • 1/4 c panko bread crumbs
  • 1 T butter
  • 1 t olive oil
  • in a large skillet, heat butter until melted, add panko bread crumbs, tossing until golden; move to platter and heat olive oil, add peppers and garlic; season with kosher salt and pepper. Cook over medium heat until peppers are blistered. Toss with panko, serve with hot crusty bread (see stirato) and goat cheese. I imagine a nice sparkling cider, Prosecco with sliced peaches, cold beer or a chilled glass of wine would pair nicely.Watch it disappear!
