Meatballs With Sweet & Spicy Grape Jelly Sauce.

okay, so i stole this from my mom.  she had it on a different post, but i thought that it would be… appropriate to call more attention to this recipe.  see, she and i were having out semi-daily skype date the other day, and she says:  ‘grape jelly! with meatballs! and sticky rice!’  now, i don’t like grape jelly, and i especially don’t wan’t grape jelly on delicious meatballs, but i love my mother’s cooking and trust her judgment.  and i do have that jar of grape jelly that one of my many failed attempts at a roommate left behind…  so let’s do this.  i’ll try this out, and make sure it’s delicious, so all of our non-exsistant readers can be sure we only give you the best.

Meatballs:

1 lb. ground chuck,
1 lb. ground pork,
1 lb. ground turkey,
1 onion (minced),
1 clove garlic (minced),
1/2 c. panko bread crumbs,
1 egg,
1/2 c. Parmigiano cheese,
salt and pepper to taste.

Mix all ingredients until meat stays together when pressed.  Shape into meatballs.  At this point, either add to your favorite sauce, simmer for 1 hour then serve with pasta, or place on baking sheet (I line mine with Parchment paper), spray with Pam, bake in oven at 450 degrees for about 8 minutes, turn once, cook an additional 4-8 minutes, depending on your taste.

Quick sweet sauce:

1 large jar grape jam or jelly (thanks Kathryn, for this wonderful idea!), dash of red pepper flakes, place in slow cooker with meatballs.  Allow to simmer for 2-4 hours.  Serve with sticky rice or pasta.
