Getting ready for a Sweet Valentine’s Day!

Nothing like getting back into blogging ~ I have managed to maintain only one of my New Year’s resolutions… now to slide back into the cyberworld…
Nothing like a little chocolate offering! (my way of asking your forgiveness!)
I was recently asked for this recipe ~ one of my kids’ favorites!
Cream cheese filled cupcakes
1 1/2 c flour
1 c sugar
1/4 c baking cocoa
1 tsp baking soda
1/2 tsp baking powder
1 c water
1 tsp vanilla
1/3 c vegetable or canola oil
1tsp apple cider vinegar
Filling:
1 (8oz) pkg cream cheese, softened
1 egg
1/3 c sugar
2 T flour
pinch of salt
1 cup mini chocolate chips
Preheat oven to 350. Mix flour, 1 cup sugar, cocoa, baking soda and baking powder in a large bowl.
Mix water with vanilla, oil and vinegar in small bowl, add to dry ingredients and mix well. Spoon into
paper-lined cuffing cups, filling the cups just over half full. Set aside and make filling.
Blend all of the filling ingredients, minus the chocolate chips, in a medium bowl. Stir in chocolate chips.
Place a small spoonful of cream cheese mixture onto the 1/2-filled muffin cups.
Bake 20 to 23 minutes. Cool ~ sprinkle with powdered sugar.
Makes about 2 dozen cupcakes.
