Homemade “bisquick” mix

Yield: Makes 4 1/2 cups

Get the measuring out of the way when you have time: Keep homemade mix on hand for these biscuits or a stack of pancakes . To add a touch of zest, add 1 squeeze of lemon juice to the liquid measure! Enjoy!

Ingredients
3 cups bread flour
1 cup whole wheat flour (or ground oat flour)
2 1/2 tablespoons baking powder
3 tablespoons sugar
2 teaspoons baking soda
1 teaspoon kosher salt

Whisk all ingredients in a large bowl to combine.
Can be kept in an air tight container for up to 6 months. I keep mine in the fridge or freezer in a ziplock freezer bag.
Use for biscuits: to 2 1/4 cups mix add 1/4 c butter or shortening, blend with fingers until small pebbles form; add 1-1 1/2 cup buttermilk, stir just until dough forms.
Turn out onto a floured surface, roll or pat out to 1/2 thick; using biscuit cutter, cut shapes ( or use knife to make square biscuits); place on parchment lined baking sheet, bake for 12-15 minutes in a 450 degree oven. Cool -enjoy!
