Yes, I’ve returned… and once again, because of my long absence, I feel I have to apologize and explain away. I have a job. In a real place, with real people, and they actually pay me! The lovely Mountain Home AFB Airmen and Family Readiness Center (where I volunteered for some time) is a dream job, and after almost 25 years of marriage, 20+ years of volunteering at one base or another, raising 3 lovely children, getting 3 degrees, moving to 11 different bases, on 3 different countries, I guess it is my time ~ anyway, I’m trying to figure out where everything fits, and coming to the realization that I don’t have unlimited time to cook and write and work and clean and care for the family…
With all that said, tonight’s dinner was something close to AH-mazing! What was it? you ask? Cheeseburgers. On homemade, toasted, onion and pecorino buns. Stuffed with cream cheese, bacon, jalepeno, garlic and pepper jack. ‘nough said.
For the buns, I used my sandwich roll recipe, added 2 T minced onion and 1/3 c Pecorino cheese to the dough, after shaping and the single rise, I brushed the tops with an egg wash, sprinkled more onion and cheese on top.
- 8 oz cream cheese
- 1 c pepper-Jack cheese, finely shreaded
- 3 cloves garlic, minced
- 2 roasted jalapeño, minced
- 3 slices applewood-smoked bacon, finely chopped
- 1/2 t kosher salt
Soften cream cheese; combine all ingredients in a bowl and stir with a wooden spoon. Spoon 1 T mixture per patty.
For burgers:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 egg
- 1 T sour cream
- 2 T milk
- 1 T Cholula
- 1/2 of onion, minced
- 2 cloves garlic, minced
- salt & pepper to taste
Combine all ingredients, shape patties, place on waxed paper, grill, eat & enjoy!
