heidi’s bran muffins


these muffins come together quickly and make a lot – perfect for sharing, or perfect to make the batter Sunday night and have fresh baked muffins all week! these are a MUST try – not your usual cardboard bran muffin! enjoy ~ v

2 c boiling water
4 c bran flakes
2 c all bran
1 c oats
4 eggs, lightly beaten
1 c applesauce/oil combination
1 qt buttermilk
2 c sugar
5 c flour
5 t baking soda
1/4 c molasses
in a large bowl, combine bran flakes, all bran oats and boiling water; allow to soak 5 minutes. Stir in remaining ingredients. Spoon into paper-lines muffin tins. Bake at 400 degrees for 20 minutes. Cool on rack, slather with good european or irish butter and prepare for glory!
