Good morning! Here’s a little a.m. twist on the old American classic, the BLT – my breakfast version is the bacon, egg, tomato and avocado toast! Enjoy!
- 2 slices brioche bread
- 2 large eggs
- 4 slices best quality bacon
- Salt, pepper and crushed red pepper flakes to taste
- 2 cloves garlic, mashed
- 1 Roma tomato, thinly sliced
- Olive oil
Cook bacon to desired crispness ( I like mine crisp-tender, surely you know what I mean). Blot with paper towels, rough chop and set aside. Heat griddle over medium-high heat; drizzle with olive oil and place bread down. With a biscuit cutter or glass, cut center of bread, leaving in place to toast. When golden, carefully turn, removing center (continue toasting round to the side of sliced bread). Sprinkle a few pieces of bacon in each hole. Break egg, placing one in each hole, season with salt and pepper. While eggs are cooking, prep avocado; cut in half; remove seed and slice meat on the diagonal; turn into a shallow bowl and mash with a fork. Stir in about a tablespoon or two of mayo, crushed red pepper flakes and garlic. Season with salt and pepper.
Turn egg toast, cook to desired taste. Remove toast to plate, slather with avocado mixture, top with more bacon and sliced tomato. Enjoy your BETAS! With love and well wishes for your best year – happy New Year!
