Serendipity is one of my favorite words! A happy accident; what could be better? (noun ~ the occurrence and development of events by chance in a happy or beneficial way. )
We had some beautiful friends over for pizza on the weekend. Tyson’s Ohana made our night a lovely one to remember 🌺
As per my usual, I made too much food, including more dough than 13 Hawaiians could consume! Not one to let food go to waste (or people go hungry), I decided to do something about the bowlful of pillowy dough today. Not sure of the direction or the outcome, I only took photos after the fact… including the evidence of my having to taste the outcome. Might I say, it is delicious!

Serendipity Pizza Rolls
- Pizza dough (you can use your favorite or find & use mine!)
- 2T cold butter, grated
- Goat’s cheese, to taste
- 1/2 cup mozzarella, shredded
- 1/4 cup Parmigiano, finely grated
- Olive oil
- 1 tsp Oregano
- 1 tsp crushed red pepper
- Kosher salt, to taste
Press and roll dough to an approximate 10 x 16 inch rectangle. Sprinkle cold grated butter evenly, leaving a one inch border on one of the long sides. Crumble goats cheese and both mozzarella and Parmigiano evenly, then season with red pepper, oregano and kosher salt; finish with a drizzle of olive oil. Starting with a long side, tightly roll and pinch seam together. Cut into 1 1/2 inch pieces; place in a buttered baking sheet. Cover and let rest for one hour. Preheat oven to 425, bake pinwheels for 25-30 minutes. Share the love ~ enjoy❣️
