Walnut Shortbread and Reflections

For so many reasons, I have been very reflective in my days… appreciating the beloved people who I have had in my life and with such profound heartbreak, missing those few who, for one reason or another, are absent from it. Never give up the chance to say, “I love you” and maybe more importantly, “I’m sorry”. May your goodbyes be filled with hope for another day and your hellos filled with joy.

Walnut Shortbread

  • 1 c butter, room temperature
  • 1 c confectioner’s sugar
  • 1/2 t vanilla
  • 1 egg yolk
  • 2 c unbleached flour
  • 1 1/4 c toasted walnuts, finely chopped
  • Pinch of kosher salt

In a large bowl, using a hand or stand mixer, whip butter until light and fluffy. Sift in confectioner’s sugar and mix until well blended. Stir in remaining ingredients, just until combined. Halve the cookie dough, placing each half onto waxed paper or plastic wrap. Shape into a round log or into a long cube. Chill at least 2 hours. Preheat oven to 350. Slice dough into thin slices, about 1/4 inch. Place on parchment-lined baking sheets 1 inch apart. Bake 10- 14 minutes. Remove, allow to cool, then devour.
