Have you been searching for that seemingly elusive, delicate, yet very delicious vanilla cupcake? I certainly have, until now!

It’s my brother-in-law’s birthday tomorrow, and I decided to bake a few treats to celebrate how wonderful, kind and generous he is. Happy birthday, Tom!
- 1 3/4 c AP flour
- 1 c raw sugar
- 1/3 tsp baking soda
- 1 1/2 tsp baking powder
- Pinch of kosher salt
- 14 T butter, melted/cooled
- 1/2 c plain yogurt
- 1/2 c buttermilk or milk of choice
- 1 T vanilla
- Vanilla beans from 1/2 of pod
- 4 egg whites, beaten to loose peaks
Place liners in cupcake pan, set asde. Preheat oven to 350. Scrape vanilla beans from pod and place in milk with vanilla; set aside. In a large bowl, sift dry ingredients, then scoop back in sifter and give it another shake. Gently fold all wet ingredients into dry (including egg whites), stirring just until combined. Fill prepared cupcake liners 3/4 full. Bake 18-20 minutes or until just a kiss of golden hue appears. Let cool in pan 5 minutes, then remove to rack to cool completely. Frost as you wish, eat, share, repeat 😋.
