Pacific Rim Chicken Burgers

1 ¼ lbs ground chicken
2/3 cup panko (Japanese bread crumbs)
1 egg, lightly beaten
2 green onions, thinly sliced
2 tablespoons finely chopped fresh cilantro
1 clove garlic, minced
1 teaspoon Asian hot chili sauce
½ to 1 teaspoon salt, to taste
¼ to ½ cup teriyaki sauce OR glaze
4 teaspoons honey
1 tablespoon vegetable oil, plus extra for hands
4 buns, split and toasted
4 leaves lettuce
1 small cucumber, peeled, halved, seeded and thinly sliced
¼ to ½ cup ginger mayonnaise (recipe follows)
cilantro sprigs for garnish

In large bowl, mix together chicken, panko, egg, green onions, cilantro, garlic, chili sauce and salt. Using lightly oiled hands form mixture into 4 patties. In small bowl mix together teriyaki sauce/glaze and honey, set aside. In a large nonstick skillet heat the 1 tablespoon oil over medium-high heat. Add the burgers and cook, coating with teriyaki mixture every few minutes until cooked through, about 10 minutes. It may be necessary to reduce heat to avoid burning glaze.
Serve in buns and top with lettuce, cucumber and ginger mayonnaise. Garnish with cilantro and cucumber slices.

Ginger Mayonnaise
In small bowl, mix together ½ cup mayonnaise, 2 teaspoons sweet pickle relish, 2 teaspoons minced fresh ginger root, 2 teaspoons lime juice, 1 finely chopped clove of garlic, and ¼ teaspoon salt or to taste.
