3 c flour
1 1/4 c sugar
2 t baking soda
1 t baking powder
1 t cinnamon
2 t vanilla
1 3/4 c almond milk or butter milk
1/2 c vegetable oil
1/4 c sour cream
1 egg, lightly beaten
1 1/2 c fresh or frozen berries
Mascarpone & powdered sugar to serve (optional, but yummy!)
Combine dry ingredients in a large bowl; whisk wet ingredients in a large measuring cup, pour into dry mixture, stirring just until all is incorporated. Fold in berries. Fill lined & sprayed muffin cups about 3/4 full.
Bake in a pre-heated (350) oven, 25-30 minutes for standard size, 15-18 minutes for mini muffins.
Turn out onto cooling rack; dust with powdered sugar; serve with love and a dollop of Mascarpone!
