I have always had a love-hate relationship with school lunches ~ loved the slightly sweet yeast rolls, hated the Salisbury steak the rolls were served with; loved the real mashed potatoes, hated the lumpy brown [gravy] stuff they drowned them in; loved the chocolate-oatmeal no-bakes on Fridays, but hated the pizza with cheese(?) and the really weird red smear of grease this cheese made on the tray… I once had lunch at my Cousin Diane’s school in Elgin, Oklahoma. There were ladies in the small cafeteria actually MAKING lunch! Smashing potatoes with an old fashioned, albeit industrial-sized potato masher!
The following recipe is a “grown-up” version of the afore mentioned no-bake cookies. I hope you enjoy!
Dark Chocolate No-Bakes with Bailey’s & Cream
- 1/3 c dark baking cocoa
- 1/2 c milk
- 10 T butter
- 2 c sugar
- 4 T Bailey’s
Combine all of the ingredients EXCEPT Bailey’s, in a large pot; bring to a medium boil, remove from heat; allow to cool for 2 minutes. Add Bailey’s and stir.
Add:
- 1 tsp vanilla
- pinch of Kosher salt
- 1/4 c confectioner’s sugar
- 1/2 c chunky peanut butter
- 1 c crisped rice cereal
- 3 c oats
Stir well and drop by spoonfuls (or 1 T cookie scoop) onto waxed paper. Cool & enjoy ~ v
