Tis the season of ~ mixing and tasting ~ baking and sharing… Here are today’s offerings… I only wish I could share the yummy smells permeating throughout my entire house. ~ Bath & Body would have a new best seller!
Scotch-Krispie Cookies
- 1 c crisco
- 1 1/2 c packed brown sugar
- 3 T buttermilk
- 1 T vanilla
- 2 eggs, lightly beaten
- 2 1/2 c flour
- 1 1/4 t baking soda
- 1 1/4 t baking powder
- 1 t salt
- 1 – 11oz pkg Butterscotch chips
- 2 c crisp rice cereal
- 1 c chopped pecans (optional)
Preheat oven to 375 degrees F. In a large bowl, cream shortening and brown sugar; add milk, eggs and vanilla and mix on medium speed until fluffy. In a small bowl, whisk dry ingredients; STIR into shortening mixture, just until combined; Stir in chips and rice cereal. Drop by teaspoonfuls (or cookie scoop, see photo) onto parchment-lined baking sheets. Bake for 11 minutes ~ enjoy! v
