Happy Finger-Lickin’ Father’s Day!

So many great men to be honored this day – my Dad, my brother, my husband and son, and the numerous friends who have touched our lives, making a difference in one or all of our lives. This one is for you:

Sweet- spiced rub

  • 3/4 c dark brown sugar
  • 1/2 t crushed red pepper flakes 
  • 4 T paprika 
  • 2-3 T cayenne 
  • 1 t black pepper
  • 3 T garlic powder 
  • 3-4 T kosher salt 
  • 2 large racks pork ribs
  • 2 24-30 inch sheets of parchment and foil (depends on how long the ribs are; you’ll want enough to make a good seal)

Preheat oven to 325.  Combine all ingredients in medium bowl, mix well. Prepare 2 parchment paper-lined foil packs by spraying lightly with non-stick spray. Reserve 2 T rub; liberally massage the rest of the rub equally on the 2 racks, turning to coat all sides and ends. Place 1 rack on parchment paper; fold parchment over ribs, then place on foil; fold ends together, making a good seal. Repeat with other rack. Place both on rimmed baking sheet and place on middle rack of oven. Bake for 3-4 hours. Remove and let stand 15 minutes.

Sweet-spiced rub

You can use your favorite sauce, but not it’s not necessary … however, for over-the-top ribs, heat your grill (or grill pan) for this one. 

Bourbon BBQ Sauce 

  • 1/3 c bourbon 
  • 4T brown sugar 
  • 1/2 t crushed red pepper flakes 
  • 1 T soy sauce
  • 2 cloves garlic, minced
  • 1 t onion powder 
  • 1 c ketchup 
  • 2 T molasses 
  • 2 T apple cider vinegar 
  • 2 t reserved rub, optional 

Combine all in saucepan; bring to low boil, then turn heat to low, allowing to simmer 5-10 minutes. 

Meanwhile, place ribs over hot coals or on hot grill pan (use 1 T butter if using grill pan), allow to char slightly. Serve hot with a side of sauce and plenty of napkins!
