When T heads out for a day of fishing, I always try to send along a little morsel to get him through the day.
Today he is taking a few neighbors out on the boat, and I made ham and cheese biscuits to lure them in!😉

- 3 c flour
- 3 tsp baking powder
- 1 scant tsp kosher salt
- 1 1/2 T raw sugar
- 1/4-1/2 tsp cayenne pepper
- 1/2 c cubed cheese (I used Panela)
- 1 c diced ham
- 6 T butter
- 1 c buttermilk
Combine all dry ingredients, mix well. Using a cheese grater, grate 3 T butter into flour, toss with fingers to gently distribute into flour mixture. Pour in 3/4 c milk, gently stirring until dough just starts coming together. Use additional milk to bring in the rest of the flour. Turn dough out onto lightly floured surface; pat into rectangle, about 8 x 14 inches; distribute half of the ham and cheese over dough. Complete a letter fold, press out into a rectangle and using the cheese grater, grate the remaining butter over dough. Complete one more letter fold, press dough into rectangle; using a sharp knife, cut straight down into 12 equal pieces (yes, these are square biscuits…no waste and no tough biscuits from over-working dough). Bake in preheated 475 degree oven for 10-12 minutes. Remove from oven, transfer to cooling rack, wait a few moments then eat ’em up!Stay well.
