I have fond memories of my Grandma Birch making toasted zucchini bread ~ the taste of warm zucchini bread, just crisped on top, covered with REAL butter, hmmm ~ I thought zucchini bread was perfect as it was, but toasted? Man, oh man! Now I take it a step further ~ zucchini bread french toast ~ I’ll supply the recipe and leave the endless, creative possibilities of your own harvest to you!
zucchini bread
- 3 cups shredded zucchini
- 1/4 cup brown sugar
- 1 1/2 cup sugar
- 1/2 vegetable oil
- 1/2 cup plain yogurt, sour cream or creme fraiche
- 2 tsp vanilla
- 4 large eggs
- 3 cups flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- t tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp fresh nutmeg, ground
heat oven to 350; spray bottoms of loaf pans with non-stick spray.
mix zucchini, sugar, oil, yogurt, vanilla and eggs in a large bowl; stir in remaining ingredients; pour into prepared pans. bake 50-60 minutes or until toothpick inserted in center comes out clean. cool 10 minutes, remove from pans and allow to cool on wire racks. get creative ~ eat fresh, eat well ~ enjoy, V
to make french toast batter: 2 eggs, beaten well; 1 tsp cinnamon, 1 T vanilla, 1/2 heavy cream or half & half; stir all ingredients well in a large, shallow bowl. dip bread slices and place on hot griddle. cook 2-4 minutes per side. to try: banana bread french toast or zucchini bread french toast ~ try with any of your favorite quick breads!
