Here is a sweet treat that is great from halloween to halloween and everyday in between!

Truffle Brownies
- 1 1/4 c butter (don’t freak out, it’s just butter!)
- 3/4 c baking cocoa
- 3 T flour
- 1 c + 1 T sugar, divided
- 4 eggs, separated
- 2 tsp vanilla
Heat oven to 425; spray bottom only of a 9 inch square cake pan with non-stick spray.
melt butter over low heat; stir in cocoa and 1 cup sugar; remove from heat, cooling about 5 minutes; stir in flour and vanilla; add yolks, one at a time, beating well after each addition.
In a large bowl, beat egg whites with the remaining 1 T sugar until soft peaks form; gradually fold in chocolate mixture. spoon into prepared pan. Bake 18 – 20 minutes or until edges (not center) become firm. The center will remain soft ~ cool, cut into 1 inch pieces then refrigerate or serve warm… garnish with confectioner’s sugar and fresh berries and whipped cream, or…
on a large round platter, make concentric circles with chocolate sauce or softened chocolate ganache… I have a squeeze bottle that I use. With a wooden skewer or butter knife, drag through the chocolate TOWARDS center, creating a “spiderweb” effect! Place small brownies throughout web; dust with confectioner’s sugar… top with CLEAN FAKE plastic spider!
