Hot Chocolate Sponge Pudding with Mocha Sauce

Sponge

  • 1 stick unsalted butter
  • 1 1/4 c sugar
  • 1/2 c cocoa
  • 4 medium eggs, slightly beaten
  • 2 1/2 c flour
  • splash of milk

Sauce

  • 4 T good quality instant coffee or 3 T espresso powder
  • 4 T cocoa
  • 1/2 c sugar
  • 1 1/4 c boiling water

Preheat oven to 325. Cream butter and sugar in a large bowl; mix in cocoa, eggs and flour until mixture is a thick, smooth consistency; mix in a splash of milk. Place “sponge” mix into a prepared (sprayed with non-stick spray) 9 inch baking dish.

Carefully whisk sauce ingredients together and pour slowly over the sponge. Bake for about 30 minutes or until top is cooked and sauce is bubbling around the edges. Serve with yummy trinity of ice-cream ~ vanilla, chocolate and coffee ~ enjoy! v
